Oh dear, I do love my pancakes! And the nicest thing is that they really go with just anything.

Although, as a Belgian, we do really like our pancakes sugary, rather than savory. Although, I’m starting to appreciate the combination of veggies with the pancake batter.

But the best part of it all is that it’s soooo easy to make. I never really understood why people would buy packages of pre-mixed batter. For normal pancakes, you just add a couple of eggs, some milk, and flour, and that’s it!

The pancakes I’m going to talk about here though will be vegan, so no egg nor milk shall touch our bowl!

Let’s have a look at three great recipes you can use yourself.

Vegan spinach pancake

Alright, let’s start with my favourite one. The spinach pancake! 

The greatest thing about this one is that you can easily give them to kids and add a sweet condiment to it. They will never know they are actually eating vegetables, and the green color looks funky!

  • Prep Time 10 Minutes
  • Cook Time 20 Minutes
  • Total Time 30 Minutes
  • Serves 4 People

Ingredients

  • 2 Cups/ 200gr Spinach (Baby spinach is my favorite)
  • 1 Cup / 240 ml Rice Milk (Other might do as well, I just like the neutral flavor of Rice Milk)
  • 1 Cup / 125 gr Self-Raising Flour (or gluten-free with baking powder added)
  • 1 Tbs Flax Seed Flour

Instructions

  1. Put milk and spinach into a blender and blend, using a bowl and a stick blender will also be fine.
  2. Put the other dry ingredients into a bowl.
  3. Gently add the dry ingredients to the wet ingredients in the bowl.
  4. Whisk the mixture until you've got a cohesive batter.
  5. Take a skillet and add a bit of oil to it.
  6. Wait until the skillet got really hot on the stove. Medium Heat.
  7. Add a portion of the batter to the skillet.
  8. Let brown for a couple of minutes. If you're fire is too hot, turn it down a little.
  9. Turn around and let other side brown too.
  10. Take the pancake out of the skillet and they're ready to serve!

Vegan Pumpkin (Spice) Pancakes

Alright, traditionally this recipe doesn’t need any pumpkin in it. However, somehow I found it to be a lot healthier when I did put some mashed pumpkin in there!

And it’s the same as the spinach, your kids will be loving the vibrant colors. And they will never expect to be eating a pumpkin as well.

This recipe does take a bit more time out of your hands, as a pumpkin needs quite some work.

  • Prep Time 20 Minutes
  • Cook Time 30 Minutes
  • Total Time 50 Minutes
  • Serves 4 People

Ingredients

  • 1 Cup / 100 gr Mashed Pumpkin (Bought or home-made)
  • 3/4 Cup / 200 ml Rice Milk
  • 1 Cup / 150 gr Self-Raising Flour (or gluten free with baking powder)
  • A Pinch of Nutmeg
  • 1/2 Teaspoon Cinnamon
  • A Pinch of Ground Ginger
  • A Pinch of ground Cloves
  • 2 drops of Vanilla Extract
  • 2 tbs of Brown Sugar

Instructions

  1. If you've made your own mashed pumpkin puree, then wait until cooled down.
  2. Add the puree to the rice milk
  3. Add the vanilla extract to this mixture
  4. Slowly add the flour and spices into the batter
  5. Bake the pancakes like in the recipe on top (from step 5 on)

Notes

If you don’t want to buy all of these spices separately, know that there’s also pre-mixed pumpkin pie spices already. Sometimes this is just a lot easier, especially if you don’t use some of these that often.

Vegan Banana Oat Pancakes

Alright, this doesn’t really sound so exciting, does it? 

Well, maybe not, but it’s a faster way to get your pancakes done and then you can just add some jam or other goodies on top to get more flavour!

Maybe it might not be ideal for your kids, but I’m really sure that you’ll be enjoying it!

  • Prep Time 3 Minutes
  • Cook Time 20 Minutes
  • Total Time 23 Minutes
  • Serves 4 People

Ingredients

  • 3/4 Cup / 100 gr Rolled Oats (I always prefer the fine oats)
  • 1 1/2 Cups / 350 ml Rice Milk
  • 1/2 Cup / 50 gr Flour
  • A Pinch of Baking Soda
  • 1/2 Banana
  • A Pinch of Cinnamon

Instructions

  1. Mash the banana until it's a puree
  2. Add the banana to the milk
  3. Add the oats to the liquid mixture
  4. If you see it's not really thickening up (if it's really fluid) add the flour
  5. Add the baking soda and the cinnamon
  6. Prepare as in Step 5 of the recipe above!
